The graphical quality vastly surpasses the original and sets a new standard for pretty pictures, both technologically and artistically. The graphical lighting and level of detail not only shows off the capabilities of the GameCube, but is also put together in such a way to maximize the dramatic effect and create an ambiance that horrifies and chills much more effectively than the original ever could have. This is the new standard by which all games will now be compared to, or at least until Project Ego is released in the fall.
The added areas make the game something new so that people who have played the original can get something new out of it besides the pretty pictures.
Pretty good character creation. They are all likable, and you can kind of see yourself in them. The characters are believable.
All of the usual pros of Resident Evil:

Weak story. It basically goes something like, "Let's go look for the people who are missing. Oh look, it's a mansion full of biofreaks. The top member of our team was involved in a secret bioweapon scheme with Umbrella and is killing us all to cover it up!? That bastard! Ok, he's dead. Now we have to blow this place up. Let's go. BOOM! The end." It really lacks depth. The sum of the plot can pretty much be summed up into the one three minute cutscene that takes place in the laboratory where Wesker informs you of his evil scheme and then dies once he tells you. The other seven hours of gameplay have pretty much no plot development in them at all.
The two main characters, Chris and Jill, don't interact with each other at all until the very end.
The two storylines are inconsistent. When you play as Chris, there's another girl in there that never shows up when you play as Jill. And when you play as Jill, there's Barry who never shows up when you play as Chris. And it never explains how Chris/Jill wound up in the Jail cell. In Resident Evil 2 the two storylines coincided with each other, but not in this one. RE2 made much more sense.
